A royally good family recipe

An old English family favourite, this chocolate cake brings a sweet sense of tradition to the King’s Birthday long weekend.


Ingredients

Cake 

  • 200g plain flour
  • 300g caster sugar
  • 50g cocoa
  • 2tsp bicarbonate of soda
  • 100g soft margarine
  • 200ml milk
  • 1 tsp vanilla essence
  • 2 eggs

Icing 

  • 1 ½ cups icing sugar
  • 2 Tbsp cocoa powder
  • 50g butter, softened
  • 2-3 Tbsp hot water

Method

  1. Preheat oven to 180°C.
  2. Sift all dry ingredients together.
  3. Add the margarine and 175ml of the milk. Stir, then beat until smooth for around 1½ minutes.
  4. Add the remaining milk, eggs and vanilla essence. Mix until combined.
  5. Pour mixture into a lined / greased cake tin
  6. Bake for 35 to 40 minutes, or until cooked through. Allow the cake to cool completely before icing
  7. To make the icing, place Chelsea Icing Sugar and cocoa powder in a medium bowl and stir to combine. Add softened butter, then pour a little hot water over the top.
  8. Mix together with a knife or spatula, adding more water as required until the icing reaches a smooth, spreadable consistency.
  9. Spread over the cooled cake and serve.
